Rundown
2 coconuts, grated
2 1/2 pints water
2 pounds pickled mackerel, cleaned
2 onions, chopped
1 clove garlic, minced
3 stalk scallion, minced
3 tomatoes, chopped
1 Scotch bonnet pepper, seeded
2-3 sprigs fresh thyme
Add water to grated coconut and press the liquid through a sieve.
Set this liquid aside to reduce until it is slightly curdled.
Add oil, stir in onions, garlic, hot pepper, thyme, flaked mackerel
with tomato. Cover and simmer for 10 minutes.
