Ginger
Beer
1/2 pound ginger (green)
1 gallon water
Juice and rind of one lime
2 pounds sugar
Clean ginger, scrape, chop and pound. Boil water. Remove from
heat and add ginger and sugar until sugar has dissolved. Add lime
juice and rind. Pour in glass or jar and allow to cool. Cover
and let mixture stand for four to five days; stir daily. Pour
mixture through strainer. Discard solids and refrigerate liquid
for two days before serving.
