The Acapulco Princess is a miniature city perched on Acapulco's southern shore. Tucked behind a veritable forest of palm trees, this luxurious hideaway is the kind of place that couples enter and never leave until their departure hour. And for those looking for a peaceful getaway, there's no reason to leave this resort. Golf, tennis, watersports, tropical flowers, gourmet dining...you name it, you'll find it at this regal hideaway.

With 750 varieties of plant life, the grounds of the Acapulco Princess first catch the eye of any visitor. The 480-acre resort resembles a botanical garden, one that includes swans, peacocks, and flamingos. But then the architecture of the resort catches the eye: this is not a standard high-rise hotel but an Aztec temple tucked in a jungle of tropical growth where waterfalls spill out into freeform pools and laughter of guests is echoed in the call of an exotic bird.


Guacamole

3 medium avocados, peeled and seeded
1 small onion, finely diced
1 medium tomato, unseeded, finely diced
2 cloves garlic, finely minced
3 chiles verdes, minced
1 teaspoon lemon juice
5 twigs coriander, coarsely chopped
salt and white ground pepper to taste

Mash avocados to a pulpy, coarse consistency. Put prepared avocado pulp into a china or stainless steel bowl. Add other ingredients, mixing well but not too long with a long fork or flat wooden kitchen spoon. Try to mix only once. Never use an electric mixer and never serve iced or too cold. Final consistency should be creamy, coarse and somewhat dry. Serve at room temperature with tortilla chips.
